Keto Mayonnaise with Bacon Fat


There are three kinds of people.

•Those who are repulsed by mayo.

•Those who eat it just as a condiment on sandwiches and whatnot and then ...

•There are those, like me, who eat it straight from the jar and dump it on darn near everything to get that extra fat for keto living.

Sometimes I think the essential and most divine purpose of the spoon is to be a delivery system for mayonnaise...or the carrot, the celery, the sweet potato fry....

I recently had the epiphany as I was making my version of a mixed oil keto mayonnaise and frying some sugar-free paleo bacon up for my salad that I could put the bacon fat in the mayo as extra flavoring.

I did and when I put it in my mouth, I could not understand how I had not taken my self-care to such levels before.

After many requests, I am finally making an actual recipe for it (I'm more of a mix and see what happens than a recipe kind of person)

So here goes....

Ingredients

2 medium size organic/farm eggs

1 1/2-2 Tbs of lemon juice

1 Tbs of brine from Bubbie's Probiotic Dill Pickles

1Tbs of Annie's Horseradish Mustard (made with apple cider vinegar)

1/4 tsp of pink Himalayan salt

1/3 c MCT oil from coconuts

1 c of avocado oil

1/4 c olive oil

2-3 Tbs of bacon fat from sugar free paleo bacon

Separate the yolks and whites of eggs.

Put yolks, mustard and lemon juice in a food processor and blend.

Put all oil in one easy pour vessel ( a 2 cup pyrex is my favorite) and as the above mixture is blending, very slowly drizzle in the oil.

When about 1/2 the oil is used up and the emulsion is solid, slowly add egg whites.

Add the rest of the oil slowly and when it's all in, add in the brine and the salt.

Wait for bacon fat to cool a little and then drizzle it in.

Mayo texture is a personal preference. You can add more oil to get it thicker or more lemon juice, brine, or water to get the flavor/viscosity you like.

Please note that this will firm up more than regular mayo in the fridge, so you may want to add more liquid if you like it to stay more viscous.

I also play with mayo and add things like turmeric, basil, natural sriracha sauce and other things depending on what I am feeling like.
